Ingredients:
1 pound medium shrimp, peeled and deveined
5 cups fresh broccoli florets (3 pounds)
1 large red and yellow peppers
1 tablespoon olive oil
1 garlic clove, minced
1/2 teaspoon salt
1 teaspoon dried oregano
1 /2 teaspoon pepper
1 medium ripe tomato, cut into wedges and seeded
Directions:
1. In a large nonstick skillet, saute peppers and broccoli in oil for 3 minutes or until crisp-tender.
2. Add shrimp, garlic, oregano, salt and pepper; saute for 3 minutes or until shrimp is cooked.
3. Add tomato, heat through and serve.
