You may also use chicken chunks or chicken menudo cut available at some grocery chicken stations.
Ingredients:
500 g (1 lb) chicken tenderloins
salt and pepper
2 tablespoons cooking oil
200 g (7 oz) sweet peas
425 g (14 oz) can baby corn, drained
1 cup chicken broth
1 cup sweet and chilli sauce
2 tablespoons vinegar
Directions:
1. Sprinkle the tenderloins with salt and pepper. Heat heavy-based frying pan and put cooking oil. Add tenderloins and cook 2 minutes on each side.
2. Add the sweet peas and stir around pan until they brighten in colour. Add the corn. Add the chicken broth, sweet and chilli sauce and vinegar. Let it simmer for 3 minutes then serve immediately.
